Ameztoi Txakolina 2025

Grown on trellises since 1820 on the slopes surrounding the seaside Basque village of Getaria, indigenous Hondarrabi Zuri grapes are hand harvested and are permitted to spontaneously ferment in refrigerated tanks. The tanks are sealed while fermentation is still ongoing, trapping some of the naturally occurring carbon dioxide which provides txakoli its unique effervescence. Aged for 6 months on the lees before bottling.
