Felsina Vin Santo del Chianti Classico 2017

Traditional Vin Santo dessert wine from the historic Tuscan domaine. Grapes are left to air-dry on racks until December and sometimes even up to January-February the following year. After pressing the must is transferred to sealed 100L casks (caratelli) along with a little bit of the "mother" (thick substance remaining in cask from previous vintages) for seven years, then a further year in bottle. Suitable for long cellaring.
