Gini Soave Classico ‘Salvarenza’ 2021

The Gini family has been making organic wines from the same vineyards since the 1500’s - so long that current winemakers Sandro and Claudio have never planted vines in their lives.  From volcanic and calcareous soils and vines up to and over 100 years old, they harvest Garganega by hand, ferment with indigenous yeasts, permitting full malolactic conversion and aging 9 months on lees in wooden barrels, with a further 6 months in bottles before release.
