The Bea family has lived and farmed in their corner of Umbria since 1500, but it was Paolo who began producing wine in the 1980’s. His two sons - Giusseppe among the vines and Giampiero in the cellar - have the reins now. Their bianco is made up of equal parts Grechetto, Malvasia, Chardonnay, Sauvignon Blanc and Garganega, hand harvested at 1,300 feet above sea level. After pressing, the juice macerates on its lees for at least two weeks and spontaneous fermentation takes place in small stainless steel vats at low temperatures. The wine is racked three times in three weeks then left on fine lees in stainless steel for one year before bottling
