Patrick Piuze Bourgogne Tonnerre Boutots 2025

Patrick Piuze spent the last of his teenage years travelling the world working in vineyards before returning to his native Montreal to open a wine bar. In 2000 he packed his bags for Bourgogne and never left.  He makes this 100% Chardonnay from a single-vineyard - Les Boutots - grown on a south-facing, limestone dominant plot in the commune of Vaulicheres just east of Chablis. About two-thirds of the juice is fermented and aged in old barrels, while the remaining third is vinified in old stainless steel tanks without temperature control
