Petit-Roy Aligote Fusion 2023

Japanese ex-patriot Seiichi Saito finished wine studies in Beaune in 2006 and started micro-négoce Petit-Roy in 2017.  Fusion is 100% Aligoté sourced from three different parcels, two of which are farmed organically and biodynamically by Seiichi.  After harvest, the grapes are pressed for 1.5 hours and fermented spontaneously then aged for 12 months in 228L and 500L old barrels before resting an additional 3-7 months in steel tank, unfined
