In 2019 Stefano Occhetti quit his corporate job to return to Roero and make wine from the steep amphitheater of hillside vines his grandfather had planted 60 years before. Stefano does all the work by hand, permitting the juice to ferment spontaneously, and vinifying in either concrete, french oak, or steel, altering maceration times according to the vintage.
