Val de Mer Brut Nature Rosé NV

Born in Montreal, Patrick Piuze worked in others’ vineyards and even owned a wine bar in his native city before packing up and moving to Bougougne in 2000.  After brief oenelogical studies in Beaune he was placed in charge of winemaking for Olivier Leflaive in Chablis and soon after, Jean-Marie Guffens in Mâcon, before opening his own winery in 2008. Sourced from hand harvested 100% pinot noir vines in Tonnerre, outside Chablis, Val de Mer is a second winery, co-owned with Moutard - Diligent. The juice is macerated briefly before spontaneous fermentation in above ground tanks, then undergoes second fermentation, spending 9 months on the lees prior to disgorging and bottling without dosage.
